This recipe is such a find. I made it in minutes in my food processor. It is a sweet-tangy cranberry salsa that gets its heat from a jalapeno pepper. I beef up the chopped cilantro (cause I love it) and add fresh green onions, lime juice, and sugar. Oranges are a great addition too.
Cranberries are only in season for a short time in the fall. Once they appear in the supermarket, fresh in bags, snatch them up while you can. They will last frozen for a few months!
You can also serve this salsa on cream cheese. Great easy appetizer for the Holidays. Makes a great Christmas gift in a Ball jar too!
1 (12 ounce) bag cranberries
1 green apple chopped
1 bunch cilantro, chopped
1 bunch green onions (or if you have red onion that works great too!)
1-2 jalapeno pepper, seeded and minced (How hot do you want it? I use two!)
Zest of orange
2 large limes, juiced
3/4 cup white sugar
1 pinch salt
Combine cranberries, apples, cilantro, green onions, jalapeno pepper, lime juice, sugar, and salt in the bowl of a food processor fitted with a medium blade. Chop to medium consistency. Add zest of orange. Refrigerate if not using immediately. Best if left overnight for at least for a few hours.
